Join us in welcoming two new members to our Proof of the Pudding culinary team – Chef Nick Klug and Chef Jimmy Petracci!
Chef Nick Klug has been hired to the GICC Culinaero team as Executive Chef. Chef Nick started working in kitchens at the age of 15 and has been there ever since. He trained in contemporary American cuisine through an apprenticeship program. He grew as a chef working in a boutique resort hotel and conference center in Green Lake, Wisconsin, first as Sous Chef and then as the Executive Chef. He most enjoys cooking Mexican, Korean and southern foods. When not working, Nick enjoys spending time with his wife (Crystal) and their two boys (Hillel and Floyd). He also enjoys listening to music, attending concerts, gardening, and working on his yard & house. Nick shares that he’s very excited to be joining the Proof of the Pudding and GICC team – and we’re proud to have him!
Chef Jimmy Petracci has joined the POP team as the Executive Sous Chef for our Off Premise Department. Chef Jimmy originally hails from New Jersey but considers himself a southern influenced chef. Throughout his career he has worked in a diverse and eclectic range of establishments, from starting out in small fine dining concepts to some of the largest sporting events in the world. Jimmy draws on these experiences to consistently deliver world class food and beverage service. Some of his accomplishments include providing three meals a day to the Athletes of the U.S. Open Tennis tournament and as the game day Chef for Arthur Blank. Jimmy shares that he’s proud and excited to be joining the team at POP and looks forward to creating many more career highlights. We have to admit, we can’t wait to see what culinary highlights Chef Jimmy will bring to the table!
